Sophorolipid is a type of glycolipid that is obtained from microbial sources of origin. The most common source of the biological substance is Candida bombicola, which is a yeast. The ratio of lactone to acidic forms formed in the fermentative broth has a substantial impact on the physicochemical and biological properties of sophorolipids. In general, acidic sophorolipids have higher foaming characteristics while lactone sophorolipids are more effective at lowering surface tension and are better antibacterial agents. Acetyl groups can potentially increase the antiviral and cytokine-stimulating properties of sophorolipids while decreasing their hydrophilicity.

Numerous non-pathogenic yeast species, including Candida apicola, Rhodotorula bogoriensis, Wickerhamiella domercqiae, and Starmerella bombicola, produce sophorolipids. Recent research has made it possible to recover sophorolipids from a fermentation utilising a gravity separator in a loop with the bioreactor, allowing for the generation of >770 g/L sophorolipid at a productivity of 4.24 g/L/h, some of the highest values ever recorded in a fermentation process.
